From Quebec, comes Brasserie Dieu du Ciel’s Derniere Volonte (7% alc, from a re-fermented bottle and poured at home)
Aroma and Appearance: pours a hazy honey colour, with very little foam and aggressive small bubbles rising from the bottom of the glass. Aroma is dominated by clovey spice and banana with a side of tropical hops.
Flavour: heavy cloves and spicy malt, finishes very dry and mildly bitter. The higher alcohol is there, but works with the beer instead of overpowering.
Overall Impression: I really like this merging of styles so I thought this was excellent, especially given the bottle conditioning aspect which is my favourite carbonation style. This would probably make a pretty killer beermosa too.
Rating: I would rate about 8/10 for a craft beer as in excellent, this is a good experience beer and one that you should savor as it goes down.
Food Pairing: Pair it with spicy food, banana bread or Belgium waffles.
