Elysian – Savant IPA: A part of Elysian’s Manic IPA Series, this IPA features Nelson Sauvin hops and is brewed at a strength of 6.3% abv with 66 IBU’s and was enjoyed at home from a 22 oz bottle as pictured above.
Aroma and Appearance: It pours a dark copper with 2 fingers of foam and some tiny sporadic bubbles. The aroma is of sweet honey, biscuit malt, mango, and a peachy fruit note.
Flavour: I get lots of sweet biscuit malt and caramel up front with a nice fruity middle and a pine resinous finish that has some grapefruit bitterness.
Overall Impression: Great stuff, love the addition of Nelson Sauvin hops to this IPA which makes it a bit unique on the market here and Marris Otter is my favourite base malt so I am glad to see them together.
Rating: Easily an 8/10 (excellent), I only wish I had a fresher bottle from 2014, perhaps next trip down south. Sadly, these are often imported here past their best drinking window.
Food Pairing: I would target the fruitiness of this beer and pair it with some chips and a nice mango habanero salsa.
Elysian is another very consistent brewer, lots of great stuff out of their brewery in Seattle. Which is your favourite?
