Dieu Du Ciel – Rigor Mortis Abt: Day 19 of my Advent Calendar exchange with my father, featuring This Belgian Quad Abbey Ale from Montreal, Quebec. This ale brewed at a robust strength of 10.5% alcohol and has been aged for 1.75 years (bottled in March 2013).
Aroma and Appearance: This a pours hazy brown with a thin layer of foam, no observable bubble action and has an aroma of earthy toffee, raisin, mild dark fruits with hints of star anise and booze.
Flavour: Fairly malt forward with a bit of anise and toffee upfront, some caramel, dates, plums and candy sugar in the middle, finally finishing with lots of nutty earth and sweet raisins.
Overall Impression: This aged well, looking at my previous review just a few more flavours were exposed through the aging process while it also mellowed together quite nicely.
Rating: I give it a 9/10 as in awesome, just slightly better than the last bottle and I wish I could find more of this.
Food Pairing: Candied Bacon
Here’s a good interview with Jean-Francois Gravel, Master Brewer at Dieu Du Ciel where he talks all about their beers.
